Spiced Oatmeal Cookies

There's something truly magical about the aroma of chai spices filling the kitchen—it’s like a warm hug on a chilly day. And when you blend those comforting flavours with hearty oats in a cookie, well, you’ve got yourself the perfect tea time treat! These chai spiced oatmeal cookies are soft, chewy, and lightly spiced with a mix of cinnamon, cardamom, and cloves. They're the kind of biscuit that begs to be dunked in your favourite brew (we recommend pairing with one from our collection, naturally). So, pop the kettle on, grab your apron, and let’s get baking!

 

Cinnamon Apple Tea Recipe by New English Teas

  

Ingredients:

  • 125g unsalted butter, softened
  • 100g brown sugar
  • 50g granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 150g plain flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • 150g rolled oats
  • Optional: 50g raisins or chopped nuts

    Instructions:

      1. Preheat your oven to 180°C (160°C fan) or Gas Mark 4, and line a baking tray with parchment paper.
      2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
      3. Beat in the egg and vanilla extract until fully incorporated.
      4. In a separate bowl, whisk together the flour, baking soda, salt, and chai spices (cinnamon, cardamom, ginger, cloves, and allspice).
      5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
      6. Stir in the rolled oats, and if you're feeling fancy, toss in those raisins or chopped nuts.
      7. Drop spoonfuls of the dough onto the prepared baking tray, spacing them about 2 inches apart.
      8. Bake for 10-12 minutes, or until the cookies are golden around the edges but still soft in the middle.
      9. Let them cool on the tray for a few minutes before transferring to a wire rack to cool completely.
